Butterfly Pea Flower, Hibiscus & Mint Mocktail: A Refreshing Herbal Summer Drink

A cooling herbal drink to welcome in summer—finally

Refreshing butterfly pea flower, hibiscus, and mint mocktail served over ice with fresh mint, alongside a bowl of dried organic botanicals.
A refreshing mocktail perfect for summer days

After what felt like the longest spring, summer is finally stretching her arms and warming the earth beneath our feet. And we’re here for it—barefoot mornings, long golden evenings, and refreshing sips that feel as nourishing as they are beautiful.

This Butterfly Pea Flower, Hibiscus & Mint Mocktail is one of those drinks you’ll want to keep on repeat all season. It’s vibrant, floral, tart, and just the right amount of sweet—with an herbal twist from organic mint and a gentle touch of local raw honey.

Even better? It’s full of body-loving botanicals. Butterfly pea flowers are rich in antioxidants and have been traditionally used to support skin, hair, and cognitive health. Hibiscus is tart, vitamin C–rich, and known for supporting the heart and circulatory system. Combined with cooling mint and mineral-rich local honey, this mocktail is as supportive as it is beautiful.

Whether you're pouring a glass for a backyard picnic or dressing it up for a slow summer evening, this recipe can be as casual or as fancy as you’d like.

Quick Recipe Summary

Prep Time: 15 minutesServings: 4–5

Ingredients:

  • 1 cup filtered water

  • 1 cup local raw honey

  • 3 tablespoons organic dried peppermint or spearmint (loose-leaf)

  • 4 teaspoons organic dried hibiscus (for approx. 4 cups)

  • 4 teaspoons organic dried butterfly pea flower (for approx. 4 cups)

  • 4 cups filtered water

How to Make It

1. Make your mint honey simple syrup. In a small saucepan, gently heat the filtered water until warm (not boiling). Stir in the local raw honey until fully dissolved. Add the dried mint and let it steep for 10 minutes. Strain and let cool. Store in the fridge for up to two weeks.

2. Brew the tea. In a teapot, French press, or tea strainer, steep the hibiscus and butterfly pea flower together in 4 cups of hot filtered water for 5–10 minutes. Strain and let cool completely.

3. Assemble your mocktail. Pour the cooled tea over ice and stir in your mint honey syrup to taste. About 1–2 tablespoons per serving is lovely, but let your taste guide you.

Serve It Your Way

  • Make it bubbly. Add a splash of sparkling water or tonic for a bit of fizz and brightness.

  • Make it fancy. Shake with ice (and optional gin or vodka) in a cocktail shaker and serve in a martini or coupe glass. Garnish with fresh mint or a citrus twist.

  • Make it ombré. For a layered look, brew hibiscus and butterfly pea flower teas separately. Pour hibiscus into your glass first, add syrup, then slowly float the butterfly pea tea on top by pouring it over the back of a spoon.

Sweetener Options

While we love using local raw honey for its wellness benefits and gentle sweetness, you can absolutely swap in another natural sweetener if you prefer:

  • Organic cane sugar: Create a traditional simple syrup by combining 1 cup filtered water with 1 cup organic cane sugar. Boil until dissolved, then steep the mint as directed.

  • Coconut sugar: Lower on the glycemic index, coconut sugar offers a rich, molasses-like sweetness.

  • Maple syrup: A cozy, mineral-rich option that pairs beautifully with citrus and mint.

This is the kind of drink that feels like a little celebration—of warmer days, of nature’s beauty, of slow sips and simple pleasures. Whether you keep it alcohol-free or turn it into a garden cocktail, it’s a stunning, feel-good alternative to the usual summertime drinks.

We’re already sipping on these as we count down to the first official day of summer on June 20th—and we can’t wait to celebrate the season with all its warmth, sunshine, and slow, simple pleasures.

Here’s to vibrant herbs, slow living, and feeling nourished from the inside out.
